The Grilled Spinach and Cottage Cheese Sandwich Recipe is a wholesome and nutritious meal option that can be had for breakfast or dinner.

Ingredients

  • For the Spinach & Cottage Cheese Filling
  • ½ cup pasteurized cottage cheese (low-sodium preferred)

  • 1 cup fresh baby spinach, thoroughly washed and finely chopped

  • ¼ teaspoon garlic powder

  • ¼ teaspoon ground black pepper

  • A small pinch of salt

  • For the Sandwich Assembly
  • 2 slices 100% whole-grain or sprouted bread

  • ½ teaspoon extra-virgin olive oil or pasteurized butter (for grilling)

  • 2 thick slices pasteurized cheddar or mozzarella cheese (optional, for extra calcium)

Directions

  • Prepare the Filling:
In a medium bowl, mix the pasteurized cottage cheese, chopped fresh spinach, garlic powder, black pepper, and salt until well combined.
  • Assemble the Sandwich:
Spread the cottage cheese and spinach mixture evenly onto one slice of whole-grain bread. If using extra cheese slices, place them on top of the mixture, then close the sandwich with the second slice of bread.
  • Grill to Perfection:
Lightly brush the outside of the bread with olive oil or butter. Heat a non-stick skillet over medium heat. Toast the sandwich for 3 to 4 minutes per side until the bread is golden brown and the filling is thoroughly warmed through.
  • Serve Safely:
Cut diagonally and serve immediately while warm.

Notes

  • Listeria Prevention: Ensure the cottage cheese is explicitly labeled pasteurized and consume the sandwich immediately after heating.
