Ingredients

  • For the crust:

  • 4 tablespoons coconut oil

  • 3-4 tablespoons water

  • 1 tablespoon honey

  • 1 1/2 cups oats

  • For the filling:

  • 8 ounces of cream cheese

  • 1/4 cup plain Greek yoghurt

  • 1 1/2 tablespoons honey

  • 1 teaspoon vanilla extract

  • A small squeeze of lemon

Directions

  • Prep the Filling: Combine the cream cheese, Greek yogurt, honey, vanilla extract, and a small squeeze of lemon in a bowl. Mix well until completely smooth, then set aside while you make the base.
  • Make the Crust: Grind the oats into a flour (or to whatever consistency you prefer).
  • Form the Dough: Add the coconut oil to the oat flour and work into a crumble with your fingers. Add the honey and the water to form a crumbly dough.
  • Press into Tins: Line a cupcake tin with baking paper and add the dough, pressing it firmly into the base of the tin to form your crusts.
  • Bake: Bake for between 15 and 20 minutes at 200°C (180°C if using a fan oven) until golden brown.
  • Assemble: Once cooked, allow the oat bases to cool completely before adding the creamy filling to your now crunchy base.
  • Chill: Allow the mini cheesecakes to set in the fridge before serving.

Notes

  • Serving Suggestion: Why not add your favorite fresh fruit (like sliced strawberries, blueberries, or raspberries) to the top of the mini cheesecakes for an extra burst of flavor?
  • The “No-Bake” Title: While the filling requires no baking, please note that the oat crust does need to go into the oven for 15-20 minutes to achieve its perfect crunchy texture!
