  • 1 cup 100% pure pumpkin puree (not pumpkin pie filling!)

  • 4-5 cups low-sodium vegetable or chicken broth

  • 1/2 cup dry white wine (like Pinot Grigio or Sauvignon Blanc)

  • 1 small yellow onion, very finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp extra-virgin olive oil

  • 2 tbsp unsalted butter

  • 1/2 cup freshly grated Parmesan cheese (plus extra for serving)

  • 1 tbsp fresh sage leaves, finely chopped

  • 1/4 tsp ground nutmeg

  • Kosher salt and freshly cracked black pepper, to taste

  • Optional Garnish: Toasted pumpkin seeds (pepitas) or whole fried sage leaves

Directions

  • Warm the Broth: Pour the broth into a medium saucepan and bring it to a very gentle simmer over low heat. Keeping the broth warm is the absolute secret to a creamy risotto!
  • Sauté the Aromatics: In a large, heavy-bottomed skillet or Dutch oven, heat the olive oil and 1 tablespoon of the butter over medium heat. Add the finely chopped onion and sauté for 4 to 5 minutes until translucent and soft. Add the minced garlic and chopped sage, cooking for 1 more minute until highly fragrant.
  • Toast the Rice: Add the Arborio rice to the skillet. Stir constantly for about 2 minutes until the edges of the rice grains look slightly translucent. (Toasting the rice helps it hold its shape during cooking).
  • Deglaze: Pour in the dry white wine and stir continuously until the liquid is almost completely absorbed by the rice.
  • The Stirring Process: Begin adding the warm broth to the rice, one ladle (about 1/2 cup) at a time. Stir frequently, and wait until the liquid is almost entirely absorbed before adding the next ladle. Continue this process for about 15 minutes.
  • Add the Pumpkin: When the rice is about halfway cooked, stir in the pumpkin puree, ground nutmeg, salt, and black pepper.
  • Finish Cooking: Continue adding ladles of broth and stirring until the rice is al dente—tender but still with a slight bite in the center. The total cooking time for the rice should be 20 to 25 minutes. You may not need all 5 cups of broth.
  • Mount with Cheese: Remove the skillet from the heat. Vigorously stir in the remaining 1 tablespoon of butter and the grated Parmesan cheese. This will create a glossy, emulsified sauce.
  • Serve: Let the risotto rest in the pan for 2 minutes. Spoon into shallow bowls, garnish with extra Parmesan cheese, cracked black pepper, and toasted pumpkin seeds, and serve immediately!

  • The Pumpkin: Make absolutely sure you are using 100% pure canned pumpkin puree, not sweetened pumpkin pie filling. If you have time, you can also use freshly roasted and blended butternut squash or sugar pumpkin!
