Ratatouille with eggs for Pregnant Women

Comforting, nutrient-dense, and packed with garden vegetables, this Ratatouille with eggs is the ultimate one-pan meal to nourish expecting mothers. By simmering fresh zucchini, eggplant, and tomatoes with pasture-raised eggs, it creates a satisfying dish that aligns perfectly with ACOG’s nutritional guidelines for a healthy pregnancy, delivering both essential fiber and high-quality protein.

Origin Ratatouille with eggs for Pregnant Women

Traditional ratatouille traces its roots to Nice, France, where farmers would slowly stew late-summer vegetables in rich olive oil. Adding baked eggs transforms this classic provincial side dish into a complete, savory meal, offering a powerful boost of choline from the yolks—a critical nutrient highlighted in pregnancy nutrition research for supporting fetal brain development and neural tube health.

Why I Love This Recipe

I love how this recipe maximizes flavor and nutrition using only a single skillet, making prep and cleanup an absolute breeze when you’re dealing with pregnancy fatigue. The thick, savory vegetable stew perfectly cushions the eggs as they cook, allowing you to easily bake them until the yolks are fully set—which is the safest preparation method according to food safety guidelines for expecting mothers.

Ingredients

  • 1 small eggplant (about 12 oz / 375 g), diced

  • 1 yellow onion, diced

  • 1 zucchini, diced

  • 1 small red bell pepper, seeded and diced

  • 2 tablespoons extra-virgin olive oil

  • 2 cloves garlic, minced

  • Salt and freshly ground pepper, to taste

  • 1 can (15 oz / 470 g) good-quality plum (Roma) tomatoes

  • 2 tablespoons chopped fresh basil

  • 4 large eggs

  • Chopped fresh Italian parsley, for serving (optional)

Directions

  • Prep the Vegetables: Preheat your oven to 400ºF (200ºC). Place the diced eggplant, onion, zucchini, and bell pepper into a 9-by-13-inch glass or ceramic baking dish. Drizzle the vegetables with the olive oil, sprinkle with the minced garlic, season generously with salt and pepper, and toss everything together until well coated.
  • Prep the Tomatoes: Pour the canned tomatoes and all their juices into a separate 8-by-8-inch baking dish. Use kitchen shears to cut the tomatoes into large chunks right in the dish, or break them up using a wooden spoon.
  • Roast: Place both dishes in the preheated oven and bake for 35 to 40 minutes. You will want to stir the contents of each dish occasionally until the vegetables are tender and lightly browned, and the tomato sauce has thickened slightly.
  • Combine the Stew: Remove both dishes from the oven and let them stand for about 5 minutes. Leave the oven on. Pour the thickened tomato sauce and the fresh basil into the dish with the roasted vegetables. Stir gently to combine.
  • Add the Eggs: Spread the ratatouille mixture into an even layer in the dish, then use the back of a spoon to make four small wells in the vegetables. Crack one egg into the center of each well.
  • Bake and Serve: Return the large dish to the oven and bake for 8 to 10 minutes, or until the egg whites are opaque and the yolks are just beginning to firm up. Sprinkle with fresh parsley if desired, and serve warm!

Notes

  • Make-Ahead Tip: To make weeknight dinners a breeze, complete steps 1 through 4 up to three days in advance! Store the combined ratatouille in an airtight container in the fridge. When ready to eat, spread the mixture into a baking dish, warm it in the oven for a few minutes, make your wells, and proceed with cracking and baking the eggs.
  • Serving Suggestions: This dish is incredibly satisfying on its own, but it pairs beautifully with a slice of crusty artisan bread or a light side salad for a complete, restaurant-quality meal.
