Directions

  • Roast the Beets: Preheat your oven to 400°F (200°C). Place each scrubbed and trimmed beet on its own small square of aluminum foil. Drizzle lightly with the 1 tablespoon of olive oil and a pinch of salt. Wrap the foil tightly around each beet to create a sealed packet.
  • Place the foil packets directly on a baking sheet and roast for 45 to 55 minutes, or until the beets are completely fork-tender.
  • Remove the beets from the oven and carefully open the foil packets to let the steam escape. Allow them to cool for 10 to 15 minutes.
  • Peel and Slice: Once the beets are cool enough to handle, use your fingers or a paper towel to gently rub the skins off (they should slip off very easily). Slice the peeled beets into bite-sized wedges or cubes.
  • Toast the Nuts (Optional): While the beets are cooling, toast the chopped walnuts in a dry skillet over medium heat for 3 to 4 minutes, stirring constantly until fragrant. Remove from heat and set aside.
  • Make the Dressing: In a small mason jar or bowl, combine the 3 tablespoons of olive oil, balsamic vinegar, Dijon mustard, honey, minced garlic, salt, and black pepper. Shake vigorously or whisk until the dressing is completely smooth and emulsified.

Notes

  • Avoid the Pink Hands: Red beets will quickly stain your fingers and cutting boards! Wear a pair of disposable kitchen gloves while peeling and chopping, and consider slicing them on a dark plastic cutting board rather than wood.
  • Golden Beets: If you want a slightly sweeter, milder flavor (and zero red stains), swap out the red beets for golden beets. They are prepared the exact same way but yield a beautifully bright, yellow-orange color.
