Ingredients

  • 10 large eggs

  • 1/4 cup milk (whole, 2%, or unsweetened almond milk)

  • 1/2 tsp kosher salt

  • 1/4 tsp freshly ground black pepper

  • 1/4 tsp garlic powder

  • 1 cup fresh baby spinach, chopped

  • 1/2 cup red bell pepper, finely diced

  • 1/4 cup red onion, finely diced

  • 3/4 cup shredded cheddar or mozzarella cheese

  • Non-stick cooking spray (or olive oil) for the muffin tin

Directions

  • Preheat your oven to 375°F (190°C). Generously coat a standard 12-cup muffin tin with non-stick cooking spray to ensure the eggs do not stick to the sides.
  • In a large mixing bowl, aggressively whisk together the eggs, milk, kosher salt, black pepper, and garlic powder until the mixture is completely smooth and slightly frothy.
  • Stir the chopped baby spinach, diced red bell pepper, diced red onion, and shredded cheese directly into the egg mixture.
  • Carefully pour or ladle the egg and vegetable mixture into the prepared muffin tin, filling each cup about 3/4 of the way to the top to leave room for the eggs to puff up in the oven.
  • Bake in the preheated oven for 18–22 minutes, or until the centers are completely set and the edges are lightly golden brown.
  • Remove the tin from the oven and let the muffins cool for at least 5 minutes before gently running a butter knife around the edges to pop them out.

Notes

  • The Sticking Factor: Eggs love to stick to metal pans! If your muffin tin is older or prone to sticking, highly consider using silicone muffin liners for zero mess and an effortless release.
  • Endless Variations: Treat the egg base as a blank canvas. Try adding crumbled cooked bacon, diced ham, sautéed mushrooms, crumbled feta, or a pinch of red pepper flakes for heat.
  • Storage and Reheating: Let the egg muffins cool completely, then store them in an airtight container in the refrigerator for up to 4 days, or freeze them for up to 2 months. To reheat, simply microwave a refrigerated muffin for 20–30 seconds, or a frozen one for 60–90 seconds until warm.
